ServSafe Manager Book 9th Edition: What Changed, What to Buy

The current ServSafe Manager Book is the 9th Edition, product ES9, which ServSafe sells for $54.99. ServSafe's catalog lists no 8th-edition Manager Book, and the 9th Edition's update sheet measures its changes "since the release of ServSafe Manager Book 7th Edition Revised," so the 9th directly replaces the 7th Edition Revised. The 8th edition you may see on the catalog is the ServSafe Coursebook, a different textbook. ServSafe describes the 9th Edition as "significantly updated to reflect the latest changes in the content blueprint and the Supplement to the 2022 FDA Food Code."
If an instructor or proctor will give you the exam, buy the book and the exam together: ServSafe's two bundles cost about $20 less than the parts. If you want to test at home, there is no bundle, and the book plus the $99.00 online-proctored exam comes to $153.99. One more thing to know before you buy: FDA issued a newer model code, the 2026 Food Code, on September 17, 2026, and the 9th Edition was built on the 2022 code and its Supplement.
Which ServSafe Manager book is current
Here is how the editions line up. The dates and Food Code versions come from ServSafe's 2022 Food Code update hub, the 9th Edition's product page and its update sheet for instructors; the prices are from ServSafe's catalog on October 4, 2026.
| Book | Built on | On ServSafe's catalog now |
|---|---|---|
| 7th Edition Revised | 2022 FDA Food Code; released October 2, 2023 in English, Spanish and Chinese | Not listed |
| 9th Edition (ES9) | FDA's Supplement to the 2022 Food Code (released November 2024) and ServSafe's 2025 content blueprint | English $54.99; Spanish $54.99; Chinese, sold with an exam answer sheet, $75.99 |
| 7th Edition, Korean | Text not revised for the 2022 Food Code; ServSafe said it would provide a supplement for the new content | Sold with an exam answer sheet, $70.30 |
| ServSafe Coursebook, 8th and 9th Editions | A separate textbook, sold through ServSafe Academic | 9th $99.50; 8th $97.50 |
For a certification class, the Manager Book is the one to have. ServSafe calls it "ideal for one- or two-day classroom instruction helping students prepare to take the ServSafe Manager Exam." The Korean row shows that a language edition can stay a version behind. When the 2022 Food Code arrived, ServSafe said the Korean 7th Edition text "will not be updated and we will provide with an supplement to cover the new content," and the Korean book on sale today is still the 7th Edition.
What the 9th Edition changes
The table is a selection of the main changes. ServSafe's update sheet for instructors lists more than 30 changed sections in all, and it warns that it "is not meant to provide a map for updating outdated materials." Each row is quoted or summarised from that sheet, the 9th Edition's product page or the National Restaurant Association's April 2026 article on the book, with the FDA provision behind it where FDA's Supplement names one.
| Topic | What the 9th Edition says | Where it comes from |
|---|---|---|
| Food safety management | Chapter 8, Food Safety Management Systems, adds material on food safety culture, self-inspections and when a HACCP plan is required. The NRA calls it a chapter "entirely focused on Food Safety Management Systems (FSMS), Active Managerial Control (AMC), and Food Safety Culture (FSC)," noting that "Previous editions have touched on those concepts." AMC is taught as "the continuous 6-step cycle." | Update sheet; NRA. FDA's Supplement "Added a new defined term ACTIVE MANAGERIAL CONTROL" and a defined term FOOD SAFETY MANAGEMENT SYSTEM, and § 8-201.15, When a Food Safety Management System is Required. |
| Food defense | FDA's Employees FIRST replaces the ALERT tool: Follow company food defense plan and procedures; Inspect your work area and surrounding areas; Recognize anything out of the ordinary; Secure all ingredients, supplies, and finished product; Tell management if you notice anything unusual or suspicious. | Update sheet; NRA. FDA's Supplement added a paragraph that "addresses EMPLOYEE training on FOOD DEFENSE." |
| Allergen notices | "You must provide written notification of major food allergens present in foods served or sold in your operation," physically (brochures, table tents, signage) or electronically (websites, apps, digital menus, QR codes). | Update sheet |
| Cross-contact | "If cross-contact occurs, the best practice is to discard any affected food and thoroughly clean and sanitize all surfaces that may have been contaminated." | Update sheet |
| Hand antiseptics | A change of name: "Hand antiseptics, often mistakenly called hand sanitizers." The 9th Edition's rule: "Only use hand antiseptics after handwashing. NEVER use them in place of it." | Update sheet. FDA's Supplement revised its public health reason for § 2-301.16 Hand Antiseptics. |
| Disinfecting | "Sanitizers reduce pathogens on surfaces to safe levels, while disinfectants are designed to further reduce pathogens and may inactivate or eliminate them." Disinfectants are best reserved for high-risk situations "such as cleaning up bodily fluid spills," and a test kit or other device must measure the solution's strength. | Update sheet. FDA's Supplement "Added a new defined term DISINFECTION to make clear its distinction from sanitizers." |
| Inspections | A new section: "Do not refuse entry to an inspector." Inspectors "have the authority to revoke the operation's permit for refusing entry." | Update sheet |
| Holding and refilling | To hold TCS food without temperature control, "Prepare written procedures in advance," keep them on site and show them to the regulator on request; an operation that primarily serves a high-risk population may not do this with raw shell eggs. Rules for refilling returnable containers are revised. | Update sheet; product page. FDA's Supplement added ¶ 3-304.17(A) on when containers may be refilled. |
| Storage and service | "Never reuse single-use containers to store food." "Separate unwashed fruits and vegetables from ready-to-eat foods." Store serving utensils in the food with the handle above the rim of the container, or on a clean and sanitized food-contact surface. | Update sheet |
| Facilities and chemicals | "Greater focus on plan reviews, valid operating permits, and equipment replacement," updated guidance on pest control, animals on premises, restrooms and waste disposal, and "New requirements for disinfectant use and the availability of Safety Data Sheets (SDS)." A plan review must now show that a food safety management system is in place or being developed. | Product page; update sheet. FDA's Supplement amended ¶ 8-201.12(E) to use the term FOOD SAFETY MANAGEMENT SYSTEM. |
Cooking, holding and cooling temperatures and the handwashing steps are not among the changes ServSafe lists. The free ServSafe Manager study guide on this site covers those core rules.
Which 9th Edition product to buy
ServSafe sells the 9th Edition alone or bundled with one of two kinds of exam, and it sells the exam on its own four ways. Prices are from ServSafe's catalog on October 4, 2026.
| What you need | Product | Code | Price |
|---|---|---|---|
| The book only (your employer or instructor supplies the exam) | ServSafe Manager Book, 9th Edition | ES9 | $54.99 |
| The book and a paper exam given by a registered instructor or proctor | Book & Exam Answer Sheet | ESX9 | $75.99 |
| The book and an online exam given by a registered instructor or proctor | Book & Exam Voucher | ESV9 | $73.99 |
| A paper exam only | Exam Answer Sheet | SSEAS | $42.99 |
| An online exam only; the proctor is arranged and paid separately | Exam Access Code | SSONLINEX | $38.99 |
| A printed exam voucher | Exam (Printed Voucher) | SSEOC | $38.99 |
| An online exam only, with online proctoring included | Exam (Online Proctor) | SSONLINEXREM | $99.00 |
With an instructor or proctor, the bundles are the cheaper route. Bought separately, the book and an access code come to $93.98, so ESV9 saves $19.99; the book and an answer sheet come to $97.98, so ESX9 saves $21.99. The answer sheet "includes administration, processing and the ServSafe Certificate upon successful completion" of the exam. It is printed in English only, but the exam booklets it goes with come in English, Spanish, Chinese, Korean, Japanese, French Canadian and Large Print.
The voucher and the access code both leave the proctor to you. ServSafe says the voucher "references an 'Exam Access Code' which is a unique, one-time use number that the examinee must enter into the computer to access the exam," and "Only Registered ServSafe Instructors or Proctors may administer the ServSafe Online Exam." Of the access code sold alone, it says it "requires an exam proctor. Additional fees will apply." The simplest way to test at home is the Exam (Online Proctor), which ServSafe lists as "Online exam with online proctoring included." Our guide to the online course and proctored exam explains how the ServSafe Manager exam access code works online.
If you already own the 7th Edition Revised
It teaches the 2022 Food Code, but not the Supplement or the 2025 blueprint, so it lacks, or has older versions of, the material in the table above, plus the other changes the update sheet lists. ServSafe's advice to instructors is plain: "We strongly recommend using this edition when teaching ServSafe," meaning the 9th. If you are buying a book now, buy the 9th Edition.
ServSafe's product pages and its update sheet describe the new book but give no date on which the exam changed to match it. When the content changed for the 2022 Food Code, books and exams switched on the same day, October 2, 2023, and ServSafe said that exams delivered before then "will not include material related to the 2022 FDA Food Code update."
A new edition does not shorten your certificate
When the 2022 Food Code changed the exam in 2023, ServSafe answered the obvious question directly: a certificate already earned stays good. "The certification is valid for three (3) to five (5) years depending on the jurisdiction." ServSafe's own term for the Manager certification is 5 years. On that precedent, the edition you studied from does not enter into it: a certificate runs its full term, 5 years on ServSafe's terms or 3 to 5 depending on where you work.
The 2026 Food Code came after the 9th Edition
FDA issued the 2026 edition of its Food Code on September 17, 2026. Its constituent update lists the headline changes: "an exception to allow for double gloving under specific circumstances; a new requirement for written employee illness policies that are maintained and available; and the establishment of an alternative cooling process for foods at retail." Its longer list includes "sanitizer temperatures" and "allergen cross-contact clarification," two areas the 9th Edition also covers (sanitizing and cross-contact). The Food Code is a model: "While it is a model code that is not required, it has been widely adopted by state, local, tribal and territorial agencies."
The 9th Edition predates these changes. As of October 4, 2026, ServSafe's Manager catalog, the 9th Edition's product page and its 2022 Food Code hub do not mention the 2026 code. For the 2022 code, ServSafe gave the dates of its new books and exams on that hub before they went live: instructor materials on September 6, 2023, books and exams on October 2.
Practice for the exam itself
The book prepares you for an exam of 90 questions in 2 hours, with a passing score of 70%, according to ServSafe. Our free ServSafe Manager practice test runs a full mock at that length and lets you drill one topic at a time across eight topics, from time and temperature control to food safety management systems. It does not yet have questions on Employees FIRST, food safety culture, written allergen notices or self-inspections, so take those from the table above and from the 9th Edition's Food Safety Management Systems chapter.

Frequently asked questions
Is there an 8th edition of the ServSafe Manager book?
Not of the Manager Book. ServSafe's catalog lists no 8th-edition Manager Book, and its update sheet compares the 9th Edition directly with the 7th Edition Revised. The 8th edition on ServSafe's catalog is the ServSafe Coursebook, a separate textbook ($97.50).
What is the newest ServSafe Manager book?
The ServSafe Manager Book, 9th Edition (ES9), $54.99 on servsafe.com. It is built on FDA's Supplement to the 2022 Food Code and ServSafe's 2025 content blueprint.
Can I use the 7th Edition Revised for the ServSafe Manager exam?
It covers the 2022 Food Code but not the 9th Edition's additions, from Employees FIRST and written allergen notices to the HACCP-plan and Safety Data Sheet material. ServSafe recommends the 9th Edition for teaching, and its product pages give no date on which the exam changed to match it.
Does the ServSafe Manager book come with the exam?
Only in a bundle. On ServSafe's catalog, ESX9 ($75.99) adds a paper exam answer sheet and ESV9 ($73.99) adds an online exam voucher. Both exams must be given by a registered ServSafe instructor or proctor. The book alone (ES9) is $54.99; to test at home, the Exam (Online Proctor) is $99.00 with proctoring included.
Do I need to recertify because of the 9th Edition?
Not on ServSafe's own precedent. When the 2022 Food Code changed the exam in 2023, ServSafe said existing certificates stay valid for three to five years depending on the jurisdiction; its standard term for the Manager certification is 5 years.
Will the 2026 FDA Food Code change the ServSafe Manager exam?
FDA issued the 2026 Food Code on September 17, 2026. As of October 4, 2026, ServSafe's Manager catalog, 9th Edition product page and 2022 Food Code hub do not mention it. For the 2022 code, ServSafe's updated exams went live on October 2, 2023, the same day as its new books.
